PRODUCT RESPONSIBILITY
Food Quality and Safety is a strategic aspect for the Iber-
sol Group. The provision of quality and safe food prod-
ucts is a basic principle for sustaining the business. The
Group is therefore committed to guaranteeing the high-
est standards of
food quality
and
safety
in all that is
offered to the customers who annually visit us, and to
promoting healthy eating habits.
This process involves the combination of several critical
aspects, specifically:
• rigorous selection of suppliers and raw materials,
including type-approval of suppliers and ingredients;
• transport and storage control, namely of tempera-
ture, condition and validity, with the logistics operator
certified in food safety;
• operational control in restaurants by means of the
HACCP system, with all products controlled daily in all
stages, namely reception, storage, preparation and
confection, exposure and distribution.
Since 2008 Ibersol’s food safety management system
has been certified by NP EN ISO 22000:2005, the most
demanding food safety standard applicable to the res-
taurant sector, guaranteeing certification of the food
safety systems of all the Ibersol Group brands and
concepts. This standard aims to assure harmonization
of the requisites needed to supply end users with safe
food. Food safety training applied to key organizational

processes and customer service, along with internal au-
ditors certified per NP EN ISO 22000 and internal unit
audits, are essential foundations for effective imple-
mentation of this standard.
In 2013 some 3,600 internal audits were conducted, as
well as 2,000 laboratory product controls in Portugal.
In 2013, the Ibersol Group’s took on the challenge of im-
plementing the same food quality and safety standards
into the new units in Angola. We expect to certify shortly
these stores under the NP EN ISO 22000 standard.
